Spicy Black Bean & Sweet Potato Tacos
It’s no joke that we love a good taco around here. Our team cheffed up these black bean sweet potato tacos and WOW. So simple, delicious and make a bangin’ combo with our Vida Verde Hot Sauce and Green Jalapeño Fermented Pepper Flakes!
All you need to make them are:
6 corn or flour tortillas (we used Whole Foods 1/2 flour 1/2 corn tortillas and they were bomb)
1 can of 15 oz. black beans (drained and rinsed)
1 sweet potato (boiled until tender)
1 Tablespoon olive oil (or avocado, coconut, whatever ya got)
½ cup vegetable broth
1/2 onion (chopped)
2 cloves garlic (minced)
1/2 tsp cumin
Picaflor Probiotic Vida Verde Hot Sauce and Picaflor Green Jalapeño Fermented Pepper Flakes (the more spice, the better!)
½ cup -1 cup of cheese (optional, we used SO-Delicious cheddar jack)
Sea salt to taste
On medium heat, sauté onions and garlic in oil until fragrant. Add in black beans and season with sea salt and a good shake of Vida Verde flakes. Once heated through, reduce heat to low, smash those bad boys up and slowly mix in veg broth until you’ve reached a creamy desired consistency. After cooking sweet potato, mash it up and add cumin. Season with desired amount of sea salt to taste.
Now it’s time to assemble the tacos! You can bake them if you want to cook all at once but to get a good char, they are awesome pan seared. Just add one tortilla to the pan at a time until slightly browned. Then scoop on some sweet potato mash & creamy black beans and spread until even or filled to your liking. If desired, sprinkle on some cheese and fold over until heated through and charred to your preference. You really can’t make these wrong so use your creativity and have fun with em, odds are they will taste delish no matter what!
Serve with a good drizzle of Picaflor Vida Verde Hot Sauce, avocado, fresh lime or whatever else your heart desires. These are also amazing leftover and you can even freeze them to reheat for a quick and easy dinner!
